Banana Bread

  • 260 grams plain flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon powder
  • 150 grams Coconut sugar
  • 3 over ripe bananas
  • 2 Egg Replacer/Flax 'Eggs'
  • 1 teaspoon vanilla essence
  • 100 grams Coconut oil OR Nuttelex

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven to 175ºc and prepare loaf pan with non-stick paper, butter, whatever you use. 

    Place bananas, eggs/replacers, vanilla and coconut oil in the mixing bowl and mix on SPEED 4 for 5 seconds. Scrape down the sides with a spatula. 

    Add flour, cinnamon, powder, soda and sugar into the bowl (remaining ingredients) and mix on REVERSE SPEED 3 for 10 seconds. This time may vary depending on if you used oil or nuttelex and how ripe and squishy your bananas were. Give it another few seconds if needed to combine.

    Pour into the prepared loaf pan and bake for 50-60 minutes. 

    Let cool before turning out.

    Tastes great toasted and spread with nuttelex!

Tip

If you wish to add any variations like walnuts, dates, chia seeds, pepitas etc do this with the dry ingredients before mixing.

You can also add a squeeze of honey or maple syrup and reduce the sugar. Play around with the sweetness!

I love this with chopped medjool dates and walnuts but when baking for daycare snacks I omit the walnuts.

    I've made this three times now, I think it's mostly great.
    The second stage of mixing is never enough for me -- after 10 sec reverse on 3 I add about 6 sec reverse on 5.5 and that seems to do the trick.
    I also double the amount of baking powder and baking soda and add 20mL of soy milk just to make the batter a bit less stodgy.

    This recipe worked, and was amazing. i replaced the coconut oil with butter (yes i know that makes it non-vegan) and doubled the recipe (mixed it twice as long on slower speed to get it all mixed, plus scraped sides a few times). I used 4 chia "eggs" (1 tsp ground chia in 3 tbp water). I also used spelt flour and decreased the amount of flour to 420 gm (for double recipe). You would never have guessed it didn't have eggs in it.
