Ingredients

  • 1 --- water, Cup
  • 1 --- sugar, Cup
  • 1 --- Mixed fruit, Cup
  • 1 heaped tablespoon Butter
  • 1 level teaspoon Bi-carb soda
  • 2 --- SR flour, Cups
  • 1 --- egg, Large, or 2 Small
  • 1 level teaspoon mixed spice

Recipe's preparation

    Mixing
  1. Add butter, water, sugar, fruit and bi carb to TM.

    Heat to 90 degrees to boil and hold for 30 minutes.Counter-clockwise operationGentle stir setting

    Replace the MC to retain the moisture.Closed lid

    The mixture will survive a wait time before adding the dry ingredients, as well as a longer cook time. This cake does not need to be fussed over.

  2. Turn off heat.

    Add SR Flour, Mixed Spice, and Eggs to fruit mixture.

    Counter-clockwise operationGentle stir setting for 60 seconds until combined. You may need to bring speed up to 3 or 4 for a couple of seconds to help the mixture come together. Do not overbeat.

    Pour into a lined log cake pan.

  4. Grease and line a log cake pan.

    Preheat the oven to 180 degrees

    Cook for 45 mins, turning down to 170 degrees if the top appears to brown too quickly.

    Cake should spring back when cooked and a skewer should be dry when testing.

Tip

This is a moist, boiled fruit cake. You can leave it in the tin and cover with aluminium foil after baking so it cools slowly.

Serve sliced, with a spread of butter.
