- 160 grams Butter, Roughly Chopped
- 20 grams honey
- 100 grams rolled oats
- 75 grams sultanas
- 90 grams Self Raising Flour
- 75 grams raw sugar
- 40 grams Desiccated Coconut
Recipe's preparation
Preheat oven to 180 degrees and grease or line with baking paper a 28cm x 18cm lamington tin.
Add butter and honey to mixing bowl and melt for 2 Minutes / 100 degrees / Speed 3 or until melted.
Add rolled oats, sultanas, self raising flour, raw sugar and desiccated coconut to mixing bowl and mix 10 seconds / "Counter-clockwise operation" / Speed 4 until combined.
Press mixture into tin and bake for 15 - 20 minutes or until golden. Cut into pieces while still hot. Remove from tin when cold.

Tip
Recipe can be frozen. When you cut the slice it will be crumbly, but will become hard when it cools

Nice. I used 150g butter as previously suggested, increased honey to 50g and omitted the sugar. Added cranberries and currants, asnd used wholemeal spelt flour. Tastes great. I might add an egg next time to make it less crumbly.

i made these based on the favourable comments but I was very disappointed. Too much butter for the quantity of ingredients so mixture was too wet. Should have trusted my instincts and put in more oats or flour before baking but followed the recipe exactly to see just how it would turn out. I will continue my search for a better recipe.

I love this recipe! This is my second time making it. I added a bag of dried apricots (turbo'd them first) & 4tbsp of black chia seeds. Plus, I reduced the butter to 150g (the first time the mixture was a bit too wet).
My kids LOVE it too! Winning!
