Invisible zucchini chocolate brownies

Brownies

  • 3 tablespoons Butter
  • 1 medium zucchini, washed and chopped into hunks
  • 3 eggs
  • 1 teaspoon vanilla essence
  • 3/4 cup raw sugar
  • 2/3 cup un-sweetened cocoa
  • 1/2 teaspoon instant coffee
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1/2 cup wholemeal flour
  • 1 cup dark chocolate chips

Recipe's preparation

  1. Pre heat oven to 180 degrees.

    Place butter in TM bowl.  Heat 90 degrees, sp2, 2 mins.

    Add zucchini, egg, and vanilla to bowl and blizt sp9 for 10 seconds.

    Add sugar, cocoa, coffee, baking powder, salt and wholemeal flour to bowl and mix speed 4, 4 seconds - until just combined.

    Add chocolate chips into bowl and press turbo twice to slightly break chocolate chips up.

    Pour into prepared 20 X 20 square cake tin.

    Bake 30 mins, or until knife entrerd in centre comes out clean.

    Eat as is, or top with a dusting of icing sugar.
