Cake

  • 250 g Butter
  • 200 g dark chocolate
  • 400 g sugar
  • 300 g water
  • 1 teaspoon instant coffee
  • 110 g plain four
  • 110 g SR flour
  • 20 g cocoa
  • 3 --- eggs
  • 6

Recipe's preparation

    Chocolate mud cake
  1. 1.  Place flours and cocoa in bowl and mix 10 sec, sp 5.  Put aside.

    2.  Place sugar and chocolate in and chop until fine.  Around 15 sec, sp 9.

    3.  Add butter, water and coffee to sugar and chocolate and melt. 3 min, 70 degrees, sp 2.

    4.  Add flour and mix 10 sec, sp 4.  Scrape sides and mix until combined.

    5.  Add three eggs one at a time though mc whole  for 10 sec, sp 4.

    6.  Pour mix into greased tin and bake at 150 degrees for around 1 3/4 hr.

Tip

Freezes really well.  I don't ice as that would be all my kids would eat but a chocolate ganache is lovely.

    Very dense but moist cake. Used 100g less sugar and was sweet enough. Iced with ganache. Mine was well cooked at 1 hour.

    Excellent cake, baked for daughters 12th birthday party and the girls loved it. We made two cakes, layered with ganache in between, covered in ganache and topped with mini Mars bars and crushed freeze dried raspberries. Popped Kit Kat's around the outside for decoration.

    Have just made this for my sons 18th cake. Couldn’t help but lick the bowl out after putting in the oven! Delicious! It’s baking now but looks and smells amazing. I doubled the recipe as I’m making a huge cake so I’ll see how it goes. Too big for the thermie so had to pull out my old mixmaster to combine 😂 Thank you!

    Made with milk choc, worked a treat for the kids. I also didn’t have instant coffee so made 300ml coffee in the plunger and cooked it for 1 1/2 hrs. Have saved as a go to recipe.

    This is the best mud Cake ever. I make it every birthday and everyone loves it. However I am now craving it and am wondering if anyone has made it into smaller cakes muffin size or slightly bigger? I don't want to make a huge cake just to satisfy my craving. But smaller cakes I can freeze for next time. How long would I cook them for?

    This mud cake is so lovely and moist and dense.   I use nestle dark chocolate, I can taste the chocolate really well from the cake.  The cake stay moist even after a few days.  Definitely a great recipe and a must to keep.

    We all loved this, my kids have all put in requests for this to be their next birthday cake.

    I had run out of dark chocolate so used milk chocolate and it was still a beautiful colour and taste.  Also I used a 24cm round pan and it cooked perfectly in the 1h45m at 150 degrees.
