Lemon & Poppyseed Muffins

  • 80 g Butter
  • 160 g sugar
  • 1 tsp vanilla bean extract
  • 370 g Self Raising Flour
  • 1 egg
  • 320 g Milk
  • Zest from 1 Lemon
  • 1 tbsp Poppyseeds

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Instructions
  1. Pre heat oven to 180 degrees.

     

    Place patty cases into a muffin tin. Makes about 12 

     

    Place butter into bowl. Closed lid Blitz on speed 5 / 2 minutes.

     

    Scrape down.

     

    Add sugar and vanilla to bowl. Closed lid Blitz on speed 5 until pale.

     

    Scrape down.

     

    Add remaining ingredients. Closed lid Blitz on speed 5 until just combined.

    Pour into patty cases.

     

    Bake for 20 minutes or until golden on top.

    Very nice. The muffins are light and fluffy. Next time I might try squeezing a tiny bit of juice into the mix to give it a little extra lemon taste. I also had to cood for an extra 8 mins, but that could be my dodgy oven. Good recipe though, thanks.
