- zest of 1 lemon
- 125 grams unsalted butter, at room temperature
- 2 eggs
- 300 grams plain flour
- 1.5 tsp baking powder

Recipe's preparation
Place 100gm raw sugar in bowl 10 sec/sp10. Set aside.
Place 200gm raw sugar and zest of one lemon in bowl 10 sec/sp10
Add butter and mix 15sec/sp5. Scrape down sides and repeat.
Add eggs and mix 5 sec/sp5.
Add flour, baking powder and salt. Mix 10sec/sp5. Put mixture into glass bowl and set in fridge for 30 minutes or until firm.
Roll teaspoon sized balls of mixture. Roll each ball in sugar dusting to coat. Space on lined baking tray and bake at 180 deg for 9-11 minutes. Cool completely before removing from tray.

Tip
You could use orange in place of lemon as a variation.

These were a hit and so simple to make. I added vanilla paste to the batch definitely added an extra flavour. Will be adding this to my favourites .

First time I made these my eggs must have been too...
First time I made these my eggs must have been too big because the cookies flattened out a lot but they were still delicious. I also wondered if I should have refrigereated the mixture for longer as it was quite sticky. So, my second attempt I modified and, very unscientifically, used only one egg, 125 g of sugar and refrigerated the mixture for 2 hours. Baked for 10 mins and gave them an extra dust of sugar after baking. Perfect! They're pretty good as orange cookies as well! Thanks for the recipe.

We froze these in individual
We froze these in individual portions and they defrosted well in lunchboxes. No complaints from the children anyway! Not sure how long they'd last in container as they are usually scoffed by my family of 6. How did you go?

Easy to make. These were lovely. I vested the lemon rind in the bowl for 20 sec speed 10 after I made the sugar powder. The batch makes heaps. I made at least 3 dozen biscuits. Are these able to be frozen? How long will they store for in an air tight container left unfrozen? Thanks for sharing.
