One of the best cake recipes ever! I swapped out the butter for coconut oil and added 1tsp vanilla. I also put the lemons rind (peeled with a veggie peeler) into the bowl with the raw sugar preceding the recipe and made caster sugar. I served the cake as a dessert with cream. Everyone loved it including my non-cake-eating son!

Really yummy cake. In my experience tastes better after a day or two. I turn it upside down out of the tin and leave it upside down to allow the syrup to soak back through again - gives a more even consistency. Thank you for this recipe. 😁

Lovely, I like the reduced amount of butter and sugar. I used half coconut sugar, just because I have it.. Cake turned out a lovely caramel colour.

I made this the other day and more than half has 'disappeared'....

I used raw sugar instead, zested my lemon into it & made my caster sugar before proceeding as per the rest of the recipe - worked just as well!

Thanks for a great, simple recipe! tmrc_emoticons.)
