Ingredients
Lemon Syrup Cake
- 125 g Butter, softened
- 185 g caster sugar
- 2 eggs
- 2 Lemon peel, Zest of 2 lemons
- 185 g self-raising flour
- 4 tbsp Milk
- 6 tbsp lemon juice, For Syrup
- 6 tbsp icing sugar, For Syrup

- Preheat oven to 160°C (fan forced). Grease and line a loaf tin with baking paper.
- Add 185g sugar to mixing bowl: mix for 10 sec | Speed 9 - let settle before opening lid and scrape down the sides.
Insert the butterfly whisk and beat the 125g softened butter and sugar for 2 mins | Speed 3, scrape down the sides of the Thermomix bowl and mix again for 1 min | Speed 3. - add 1 egg and mix 5 sec | Speed 9
through the lid add 2nd egg and mix 5 sec | Speed 9
Then add lemon zest. Mix additional 30 sec | Speed 4 - Add 185g self raising flour and 4 tbsp milk: 15 sec | Speed 5 Scrape down and repeat if needed until just combined (don’t overmix!).
- Pour batter into prepared tin, smooth top with spatula.
Bake 30–40 min or until a skewer comes out clean. - Prepare syrup
Rinse mixing bowl, then add 6 tbsp lemon juice and 6 tbsp icing sugar:
20 sec | Speed 3–4 (until smooth) - As soon as cake comes out, prick top all over with skewer. Pour syrup evenly over the hot cake.
- Let cool completely in tin to soak up all that lemony goodness. Slice & impress!

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
