Lisa's Banana Muffins

  • 250 gram bananas, approx 3 bananas
  • 60 gram Butter, softened
  • sugar, 1 cup

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. 1) Pre-heat oven to 180 degrees
    2) Grease mini muffin tray
    3) Place bananas into mixing bowl and mash 5 sec /speed 6. Scrape down sides of bowl.
    4) Add butter and sugar to bowl and mix 20 sec / speed 4. Scrape down sides of bowl.
    5) Add eggs and mix 10 sec / speed 4
    6) Add SR flour, milk and vanilla and mix 20 sec / speed 4.

    Mixture is quite thick so don't be alarmed! Using a spoon, half fill all sections of muffin trays and bake in the oven for 10-15 mins, or until cooked through.

    Cool for 5-10 mins before turning out on to wire rack to complete cooling.
