  • 250 grams Milk Arrowroot Biscuit
  • 125 grams unsalted butter
  • 120 grams caster sugar
  • 2 tablespoons cocoa powder, 70% cocoa
  • 2 tablespoons dessicated coconut

  • 1/2 tsp vanilla essence

Recipe's preparation

    HEDGEHOG STEPS
  1. Add biscuits to Thermomix bowl. Blitz for 3 seconds, speed 4
  2. Break any larger pieces of biscuit up with spatula or fingers, then set aside in a seperate bowl.
  3. Add butter to bowl and melt for 2 minutes, 30 seconds, 80 degrees, speed 1
  4. Add caster sugar and cocoa powder
  5. Cook for 5 minutes, 80 degrees, speed 1
  6. Add coconut, whisked egg and vanilla to bowl. Mix for 10 seconds speed 3
  7. Add crushed biscuits to bowl ad mix for 10 seconds, reverse, speed 3
  8. Turn out into tray lined with baking paper or tray liner and spread out with a fork. Set aside.
  9. Add icing ingredients to bowl and mix for 20 seconds speed 4
  10. Spread icing on slice with a wet knife, then refridgerate till set.
