Mathias' crunchy top lemon cake

  • 120 g Milk, or buttermilk
  • 250 g unsalted butter
  • 250 g white sugar
  • 4 eggs
  • 275 g Self Raising Flour
  • 1 tsp baking powder
  • 2 lemons, zest and juice

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat oven to 180 degrees
    grease and line 20cm cake tin
  2. Add suger and lemon zest
    blitz 2 seconds, speed 10
    repeat x3, scraping down sides of bowl in between
  3. Add remaining ingredients
    mix 5 seconds, speed 5
    repeat, scraping down bowl in between
  4. Pour in to prepared tin and bake for approximately 30 minutes
  5. Once cake is almost cooked, mix topping ingredients together
  6. Allow cake to cool for 5 minutes
    Pierce several holes in top of cake with a skewer then pour toppping mixture over
  7. Allow to cool completely before serving
