Ingredients

Cake

  • 100 g Butter
  • 250 g Milk
  • 2 eggs
  • 2 tsp vanilla extract
  • 460 g sugar, (OMG!!!)
  • 290 g plain flour
  • 65 g cocoa
  • 1.5 teaspoons bi-carb
  • 1.5 teaspoons baking powder
  • 230 g Boiling water

Frosting

  • 200 g icing sugar
  • 75 g Butter, at room temp
  • 30 g cocoa
  • 150 g cream cheese, cubed
  • 1 tsp Vanilla Paste

Recipe's preparation

    Cake
  1. Pre-heat oven to 180°C.  (My oven runs a bit cool so I cooked on 190°C)

    Grease up 2 x 20cm cake pans.  (I used 2 x rectangle pyrex dishes about 15 x 20cm) OR 1 x large pan.

    Melt butter for 1 min / 60°C / speed 2 or until completely melted.

    Add milk, eggs & vanilla extract.  Mix 3 seconds / speed 3.

    Add remaining cake ingredients - EXCEPT water.  Mix 20 seconds / speed 4.  Mix will be THICK.

    Add boiling water.  Mix 10 seconds / speed 4.  Scrape sides & bottom of bowl - cake was thick, so make sure you get anything that's been stuck on the bowl.

    Mix 10 seconds / speed 4.

    Pour into oiled pans and cook 45 minutes, or until a skewer comes out clean.

    Leave in pan 10 minutes, then carefully turn out and allow to cool completely before icing.

     

  2. Frosting
  3. Add icing sugar, butter, cocoa & vanilla to the bowl.

    Mix 5 seconds / speed 6, or until mixture comes together.

    Add cubed cream cheese and mix speed 7 / 10 - 15 seconds, or until combined and motor takes off!

    Put in butterfly and mix 2 minutes / speed 4.

    Ice cakes as required and decorate!

    So delicious! I made this three times last week alone! 2 birthday cakes and a batch of cupcakes for the coronation. Makes 24 cupcakes at least. I use the standard buttercream recipe from cookidoo but should try this one. The last cake I made I did a layer of caramel (I used the Millionaires Shortbread with a Twist caramel recipe from Cookidoo) between the layers and it was AMAZING!!

    We were still eating the cupcakes almost 4 days later and they were stil delicous and moist. Perfect chocolate cake!

    Would this cake be suitable to stack and make into a drip cake with buttercream layers? Or too moist/dense and will squash buttercream?

    This is my go to chocolate cake as it is so moist and serves many people, which is great for a birthday cake. I tried a dairy-free option due to someone's dietary requirements and it turned out just as great! I used dairy-free butter and rice milk as substitutes and then made a dairy-free buttercream for the icing (using same substitutions) and the cake was a hit. Thanks for such a no-fail recipe!

    I agree with everyone else a perfect & delicious cake. Very easy. I left all the ingredients as they were & found it sweet but not overly. Definitely will be a winner at family dinner tonight. Thank you for adding this recipe for us all to enjoy 😊

    My whole family loves this cake. It is so moist and has a great chocolatey flavour. We do reduce sugar to 360grams and tastes great. We make this every couple of weeks for school and work lunches.

    Lovely cake. i only used 320g of sugar as i knew the icing would be sweet (used a diff icing recipe) so whilst the cake itself wasn't that sweet it was balanced by the icing.

    I used a 22cm pan and it didn't rise evenly so cut the top off. Next time will use two smaller ones (just didn't have two the same size that were smaller)
