  • 1 ripe banana, broken up
  • 50 g Milo
  • 10 g Cocoa (you can use more milo instead but I use cocoa to lessen the sugar)
  • 260 g Wholemeal Self Raising Flour
  • 20 g Flaxseed Meal
  • 120 g sugar
  • 1 egg
  • 200 g Milk

Recipe's preparation

  1. Preheat oven to 180 degrees.
    Place everything into the tmx bowl.
    Blitz on speed 4 until just combined.
    Spoon muffin mix into muffin cases or a greased muffin tray.
    Bake for 25 minutes or until cooked through.
    This can be frozen. Mix makes 12 medium sized muffins.

    Won't make again. Noting the comments about them being dry I added an extra egg and while the texture was fine the taste was not quite right, not quite balanced.

    I liked them but there was something missing....I did use white SRF but shouldn't have really made a difference.

    I followed word for word but mine came out looking good, but tasting REALLY dry. tmrc_emoticons.( (I did the milo/cocoa ratio too). Bummed, as I LOVE bananas + milo!
