Recipe's preparation

    Mini Pancakes
  1. 1. Place butter in the bowl. Melt 3 minutes, speed 1, 80 degrees.

    2. Place the rest of ingredients in the bowl.

    3. Mix for 20 seconds, speed 4.

    4. If batter is very thick i normally add some more milk and mix for 15 seconds, speed 4.

    5. Heat a non stick frying pan and cook to the size & shape you require.

Tip

You can make many different variants with this recipe. You can add blueberries, choc bits, fruit puree or anything you desire.

Perfect for kids school snacks as the batter will keep in the fridge for 2 days.

    Very simple and quick snack. Made using skim milk and will keep remaining batter in fridge as per note for easy next day lunch box snack.

    I made these with Nut butter and rice milk instead to make them dairy free and used GF flour for gluten free and they turned out great and all my kids (even the ones without intolerances) loved them.

    Made these for tea tonight. Great and easy to follow, not as sweet to eat as I would have liked so next time I will up the sugar content a little. But, kids and hubby loved them! Lovely! Thanks!  Cooking 10
