Oat biscuits

  • 120 grams Butter, Chopped
  • 1/3C caster sugar
  • 1/2C brown sugar, Lightly packed
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/2C SR flour
  • 1/4 teaspoon salt
  • 140 grams rolled oats
  • 120 grams Additions - Dried fruit, nuts, choc chips

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Oat Biscuits
  1. 1. Preheat oven to 180 degrees, and line to baking trays with baking paper.
    2. Place butter, sugars, and vanilla extract into mixing bowl. Mix for 20 seconds / speed 4.
    3. Add egg. Mix 15 seconds / speed 4.
    4. Scrape down sides. Add SR flour and salt. Mix 20 seconds / speed 4.
    5. Add oats and any additions. Mix 10 seconds / Speed 3 / Reverse.
    6. Roll in equal sized balls and place on baking tray. Leave room to spread.
    7. Bake 10-12 minutes, or until lightly golden.

    Hubby made this recipe and found it easy to follow. We grated some white chocolate for our additions as we didnt have anything else in cupboard. Yummy - kids lunchbox treat.

    Made these for lunches and they disappear !
    I add a real variety of extras : chai seeds, cranberries, pepitas and quinoa. Oh and I added some butter milk that I had left because the initial mixture seemed a bit stiff with all the added extras.
