Recipe's preparation
- 1. Add 520g flour, sugar, yeast & salt To TM bowl.3. Add buttermilk to measuring cup and warm for 45 seconds in microwave4. To the dry ingredients, add melted butter, eggs and buttermilk. Mix at speed 4 for 30 seconds.5. "Dough mode" for 2.5 minutes. If after 2.5 minutes more flour is needed, add reserved 30g and "Dough mode" 2.5 minutes until dough clears the side of the bowl but sticks to the bottom. Don't over flour, sticky is good. 6. Turn oven to 200 degrees for 1-2 minutes.7. Spray a large mixing bowl with cooking spray and remove dough from the TM bowl putting into the oiled mixing bowl. Cover with plastic wrap. Put into oven (now off) and let rise for 2-2 1/2 hours.7. Line a baking pan with foil and spray.8. After dough has doubled in size, punch down and turn dough out onto a lightly floured bench. Knead lightly. Roll out dough to 16 by 12 inch.
- 1. Butter your rolled out dough, leaving about 1cm border2. Sprinkle with brown sugar3. Sprinkle the cinnamon generously over the brown sugar. Using palm of your hand, very lightly run your hand over the cinnamon and brown sugar until all the butter is covered. 4. Very gently loosen the dough from the counter with a metal spatula. Roll dough from the longest side into a tight log. Slice into an even number of rolls, about 1-1.5cms thick. Arrange into pan, cover with plastic wrap and refrigerate minimum 2 hours or overnight. 5. Take rolls out and sit on the counter for about an hour.6. Bake at 180 degrees for 22-25 minutes. When golden on top, remove from oven and immediately cover with frosting.

Tip
When taking it out to sit on the bench in the morning for an hour, I take the butter and cream cheese out at the same time so they soften and while the scrolls cook I make the frosting.
