Paleo Anzac Biscuits

Ingredients

Paleo Anzac Cookies

  • 40 grams coconut oil
  • 60 grams Raw Honey
  • 1 tsp baking powder
  • 1 tsp filtered water
  • 180 grams almond meal
  • 130 grams Shredded coconut
  • 180 grams raw macadamia nuts

Recipe's preparation

  1. Pre Heat oven to 150 - Line Cookie tray with baking paper

     

    Add Coconut Oil & Raw Honey to the bowl 

    Melt 2 minutes *60 Speed 2

    Add baking Powder & Water

    Mix 10 seconds Speed 2

    Add Almond meal, Coconut and Macadamias

    Mix 10 sec speed 4, then 10 seconds speed 4 reverse

     

    Roll into balls and gently flatten, bake in oven for approx 15min or until golden brown

    I found this recipe very crumbly so added another heaped tablespoon of honey and it was much better. Very delicious.

    Founde recipe very crumbly and hard to form into biscuits so i added 1 egg to the mix which made it so much better and less crumbly.  Taste was nice but not heaps of flavour, maybe more honey or some vanilla might help. Great recipe for paleo, thanks!

    Followed this recipe to a T, sorry TattooedMumma not for me! Too crumbly, I feel like they needed some more moisture? And just not the taste I was looking for in an 'Anzac' biscuit tmrc_emoticons.)

    The crumbly mixture worried me when rolling, but they cooked up a treat!  A hit with hubby, toddlers and myself!  Great to have a healthy sweet biscuit!

    These are absolutely delicious, and so easy to make tmrc_emoticons.) I didn't have any macadamias and used cashews instead - worked out well. Thank you tmrc_emoticons.)
