Paleo Banana Muffins

  • 315 g Almonds raw
  • 1 teaspoon bicarb soda
  • 1.5 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 90 g coconut oil
  • 90 g honey, Organic raw
  • 3 eggs
  • 2 teaspoon vanilla extract
  • 2 bananas
  • extra banana for garnishing

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven 180*

    1. Mill almonds 10secs, speed 10

    2. Add the remaining ingredients and combine 10 secs, speed 5

    3. Scrape down sides of the bowl

    4. Mix again 5 secs, speed 4

    5. Line a 12 hole muffin tin with patty papers and part fill with the mixture.

    6. Top with a slice of banana

    7. Bake in oven 20 mins for 180*

    I accidentally left the coconut oil out but they still tasted fine!! The mixture made 36 mini muffins which I cooked for 13 minutes. Used maple syrup instead of honey. Yum!

    These are delicious...like other comments I used 1/2 tsp salt and subbed honey for rice malt syrup as we are fructose free. Also made mini muffins that cooked in 10mins and made over 40 of them, loved by kids and adults alike. Thanks for the recipe

    What a great recipe! I certainly didn't find this 'wet' at all.. They were perfect! Just like a normal banana muffin, but clean and healthy! I did only add 1/2 teaspoon of salt.

    Thanks for sharing the paleo banana muffin recipe. I've been grain free for a few years and only recently got the Thermomix. Banana muffins are regular item in our house but until I saw your recipe I had no idea how to make them in my thermie. They were awesome and I now save money by buying whole almonds instead of almond meal.  Love Big Smile
