'Paleo' chocolate coffee bacon brownie

  • 2 slice bacon, pastured, nitrate free if possible
  • 100 gram dark chocolate
  • 50 gram Butter
  • 3 eggs
  • 65 gram Maple syrup
  • 30 gram cacao powder
  • 2 tablespoon Strong Coffee
  • 2 tablespoon fine ground coffee

Recipe's preparation

    'Paleo' chocolate coffee bacon brownie
  1. 1. heat oven to 180 and line brownie tray with baking paper

    2. on the stove, panfry the bacon.  when cooked, remove, cool and dice. set aside.

    3. Break up chocolate and put in TM bowl with diced butter.  Melt 3 minutes, 50 deg, speed 3. scrape down sides.

    3. Add maple syrup and eggs, mix 10 sec speed 4

    4. add cacao power, coffee grinds and coffee liquid and mix 20 seconds speed 4.  Scrape down sides.

    5. pour mixture into the lined tray and top with diced bacon.

    6. bake in the over for 30 mins.  Remove when done and allow to cool before slicing

Tip

As this brownie is 'paleo-ish' it is not overly sweet, so add a little more maple syrup if needed
