Peppermint Black Bean Brownies

batter

  • 1 can Black Beans, drained and rinsed
  • 2 large eggs
  • 30-40 g cocoa powder, to taste
  • 150-200 g Honey or Rice Malt Syrup, to personal taste
  • 60 g coconut oil
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 2-4 drops food grade peppermint essential oil or peppermint essence
  • 100 g dark choc chips

Icing

  • 200 g icing sugar
  • 20 g Raw cocoa powder
  • 20 g Milk
  • 40 g Butter, softened
  • 2 drops food grade peppermint essential oil or essence

Recipe's preparation

    Batter
  1. step 1 Preheat oven to 180 degrees and prepare and line a brownie tin
    step 2 Place all ingredients, except for chocolate chips into bowl and mix speed 5 for 20-30 seconds. Scrape down sides of bowl and mix again for 20 sec speed 5.
    step 3 insert butterfly if using, Put in chocolate chips and combine speed 2-3 for 10-20 sec until combined. If not using butterfly attachment, mix on Counter-clockwise operation speed 5.
    step 4 Pour into prepared tin and bake 30–35 minutes or until toothpick comes out clean.
  2. Icing
  3. add all ingredients to bowl and whisk on speed 4 for 20-30 secs
    Scrape dwon sides and repeat until ingredients incorported and lightened in colour

Tip
