Quinoa Banana Bread

Ingredients

Dry Ingredients

  • 250 g plain flour
  • 100 g caster sugar
  • 1 tsp baking powder
  • 1 tsp bicarb soda
  • 1 tsp cinnamon
  • 1 pinch salt

Wet Ingredients

  • 50 g Butter
  • 150 g ripe bananas
  • 1 egg
  • 1 --- cup cooked quinoa
  • 70 g Low fat Greek Yoghurt

Recipe's preparation

  1. Preheat oven to 160deg and oil a muffin tin or mini loaf pan.

  2. Add all dry ingredients to bowl and mix on speed 5 for 10 seconds then SET ASIDE.

  3. Add butter to bowl and melt at 50deg for 1.5 minutes on Speed 3.  Add remaining wet ingredients and mix Speed 3 for 10 seconds

  4. Add dry ingredients and mix on Speed 3 for 10 seconds.  Scrape sides and repeat if necessary.  You can add some frozen berries or choc chips at this point and mix on Reverse Speed 2 for 5 seconds.

  5. Spoon into muffin tray and bake for 15-20 minutes.
