Rachael's Canadian Banana Muffins

Ingredients

Banana Muffins

  • 100 g Butter, roughly chopped
  • 55 g brown sugar
  • 250 g Milk
  • 1 egg
  • 4 ripe bananas, peeled
  • 300 g SR flour
  • pinch salt

Recipe's preparation

  1. Add butter to bowl. Melt 1 min/60°C/speed 2.

  2. Add brown sugar, milk, egg and bananas and mix 6 secs/speed 6. to mash bananas.

  3. Add SR flour and salt. Mix 20 sec/speed 4.

  4. Pour mixture into muffin tins and cook at 180°C for about 20 mins or until set.

Tip

Note: Muffins are a very moist texture inside because of the quantity of bananas in this recipe. This is normal as long as they are set (a knife comes out clean when piercing muffin)

 

I made 11 medium muffins (pictured) and 26 mini muffins with this recipe.
