Raspberry & chocolate chip spelt muffins (dairy free)

Ingredients

16 piece(s)

Muffins

  • 290 grams spelt flour or your choice of flour
  • 4 teaspoons Baking Power
  • 1 teaspoon ground cinnamon
  • 1 pinch Himalayan salt
  • 80 grams Rapadura Sugar
  • 100 grams coconut oil
  • 230 grams coconut milk
  • 1 --- egg
  • 150 grams raspberries, fresh or frozen
  • 80 grams chocolate chips

Recipe's preparation

    Method
  1. Weigh in flour. Baking powder, cinnamon, salt & sugar. Mix speed 4, 20 seconds. Set aside.

  2. Melt oil, 60 degrees for 1-3 mins (until melted).

  3. Add milk, egg & flour mix. Mix on speed 3-4 for approx. 20 seconds. Scraping down if needed. do not over mix. 

  4. Weigh in berries & chocolate chips & fold in by hand using spatula. 

  5. Spoon mixture into muffins cases (I use silicone ones).

  6. Bake at 180 degrees (fan forced oven) for 15 - 20 minutes. Until they spring back, skewer comes out clean but still moist.

Tip

raspberries can be substituted for other berries.

choc chips can be dark, milk or white. I use dairy free.

    The best muffins I've had! I used SR flour and omitted the baking powder.  Mine took longer to cook but that wasn't an issue. Yummy!

    Lovely, so fluffy and light. I used normal milk as I didn't have any coconut milk and they were fine. Thanks for sharing. tmrc_emoticons.;)
