  • 140 grams Cashews, base
  • 180 grams pitted dates, base
  • 1 level tbsp lemon juice, base
  • 260 grams Cashews, centre
  • 160 grams coconut cream, centre
  • 30 grams lemon juice, centre
  • 30 grams Rice malt syrup, centre
  • 1 portions lemon zest, grated, centre
  • 180 grams Frozen Blueberries, top
  • 110 grams coconut cream, top

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Place base ingredients into bowl and blend 20 sec / speed 8, scrape down sides and blend a further 10 sec / speed 8. Press the mixture into the base of a lined tin. Place into freezer to set while you continue recipe
  2. add the centre ingredients and blend 30 sec / speed 8, scrape down sides and blend a further 10 sec / speed 8. Pour over base layer and level out and place back into the freezer to set.
  3. add the top layer ingredients and blend 30 sec / speed 9, scrape down sides and blend a further 15 sec / speed 9. Pour over centre layer and put back into the freezer to set for about 2 hours.

    Once all layers have set remove from tin and cut into portions, keep in freezer and serve as desired
