Rich Toasted Muesli Clusters

Ingredients

500 g

  • 50 g coconut oil
  • 70 g honey
  • 50 g brown sugar
  • 1 tsp vanilla extract or paste
  • 200 g gluten free rolled oats
  • 1 tsp cinnamon
  • 1 pinch Nutmeg
  • 1/2 tsp salt
  • 120 g raw almonds
  • 120 g sultanas

Recipe's preparation

  1. Preheat oven to 150 (fan-forced).


     


    Line a baking tray with baking paper, set aside.


     


    Put the coconut oil, honey, brown sugar and vanilla extract/paste in the mixing bowl and mix 1 min/50/speed 3.


     


    Add the oats, cinnamon, nutmeg and salt. Mix 15 sec/speed 2/counter-clockwise operation.


     


    Spread mixture evenly over your baking tray. Bake for 10 mins.


     


    Take out of the oven and use a spatula to gently flip/stir the muesli. Sprinkle over the almonds, then bake for a further 10 mins. 


     


    Take out of the oven, sprinkle over the sultanas, and bake for a further 5 mins.


     


    Remove from oven and leave to cool on the tray. Use your hands to break the muesli up into clusters.

Tip

You can substitute the almonds and sultanas for macadamias, cranberries, apricots, cashews, walnuts - whatever fruit and nuts you have on hand.

    Absolutely delicious and easy to follow! I did Thermi the almonds to chop them up a little bit before adding them to bake, just my personal preference.

    I love this. I'm not a sultana fan so I add dried apricots instead. I blitz them and the almonds in the thermi quickly before the first step. Kitchen always smells beautiful while Im cooking this. Thanks for the recipe.
