Rock Cakes adapted from The Commonsense Cookery Book
- 8 Glacé cherries (red), cut into halves
- 285 grams Self Raising Flour
- 70 grams Butter
- 115 grams White sugar or raw sugar
- 1/2 level teaspoon ground ginger powder
- 2 heaped tablespoons Mixed fruit
- 1 egg
- 3 level tablespoons Milk

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Measure sugar into TMX bowl "Closed lid" and grind 5 seconds/ speed 9
weigh in SR Flour, Diced Butter, ginger and process 5 seconds/ speed 5.
add dried fruit, egg and milk blend/ 18 seconds/ reverse blade"Counter-clockwise operation" / speed 4. In cold weather it took up to 40 seconds for mixture to come together.
Place 16 spoonfuls of mixture (rough heaps) onto Thermomix baking mat and press a cherry into each one. bake for 20-25 minutes at 180 degrees celcius or until golden brown. You can sprinkle extra sugar on top for that 'cake shop' look 😉
remove from baking mat onto cake cooling rack
Pre heat oven to 180 degrees Celsius

Tip
You can substitue chopped dates and fine lemon rind for the mixed fruit.
