Shar's Salted Caramel Fudge

  • 200 g white chocolate
  • 120 g Butter
  • 2 tbsp golden syrup
  • 220 g brown sugar
  • 395 g condensed milk

Recipe's preparation

  1. Line a 28cm x 18cm slice tray with baking paper. Make sure it comes up over the sides
  2. Place 200 grams white chocolate in Thermomix bowl.
  3. Chop 4 sec/speed 8.
  4. Transfer into a bowl and set aside until needed.
  5. Place 2 tablespoons golden syrup, 220 grams Soft brown sugar 395 grams sweetened condensed milk, 120 grams Butter into the mixing bowl.
  6. 8 min/100°C/speed 2 MC off
  7. Scrape down the sides of the bowl with spatula
  8. Cook a further 20 min/Varoma/speed 2. MC on.
  9. Dry Lid
  10. Add chopped white chocolate
  11. Mix 10 sec/speed 4
  12. Immediately transfer fudge into prepared tray and smooth surface.
  13. Sprinkle with sea salt
  14. Leave the fudge on the bench overnight to set before cutting into pieces.
