For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Place ginger and water into mixing bowl and cook 1 hr/100/"Counter-clockwise operation" /speed 1 or until ginger is tender.
Transer liquid and ginger into a jug. Then weigh 200 g of the ginger water and sugar into mixing bowl and cook 20
min/100/speed 1.
Add ginger back into mixing bowl and cook 20 min/100/"Counter-clockwise operation" / speed 1.
Divide ginger and syrup between 2 sterilised jars. Ensuring syrup covers ginger to preserve. Store in refrigerator.

Tip
Stem Ginger can be used in biscuits, cakes and bread. Syrup could be added to custards, desserts and cocktails.

This is sooo good. Used it in the Double Ginger and Pear Cake - to die for. It makes quite a bit of syrup which is also delicious in soda water.
