Strawberry Shortcake

  • 125 g self-raising flour
  • 125 g caster sugar
  • 125 g Butter, softened
  • 2 eggs
  • 1 tsp Vanilla Bean Paste
  • 300 g pouring (whipping) cream
  • 2 tablespoons icing sugar
  • 1 tsp vanilla extract
  • 200 g strawberries, hulled, 100g reserved for decorating

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Strawberry & Vanilla Teacake
  1. 1. Pre-heat oven to 160 degrees celcius (fan-forced). Line and grease a 20cm baking tin.
    2. Puree 100g of strawberries, 10 seconds/speed 10. Set aside in small bowl.
    3. Add sugar and butter to the bowl and mix/melt 2 minutes/ 50C/speed 1. Then mix 1 minute/speed 3.
    4. Add eggs and mix speed 3 until just combined.
    5. Add flour and vanilla paste and mix 20 seconds/speed 3.
    6. Pour batter into prepared pan and smooth the top with a spatula. Spoon over pureed strawberry and swirl using a knife.
    5. Bake in pre-heated oven for 30-35 minutes until the cake is cooked. Test using a skewer.
    6. Allow cake to cool in tin for 5 minutes before removing and placing on a wire rack to completely cool.
    7. In a clean, dry bowl insert butterfly whisk. Add pouring cream, icing sugar and vanilla extract. Whip 20 seconds/speed 4. Continue whipping until desired consistency is reached. Take care not to overwhip.
    8. Decorate cooled cake with whipped cream and strawberries.

    This cake is incredible. Simple and easy and so full of flavour. It is very hard to stop at one slice.
