Vanilla Paste

  • 500 grams raw sugar
  • 10 - 14 vanilla beans
  • 200 grams water
  • 2 teaspoon Cream of Tartar.

Recipe's preparation

    Vanilla Bean Paste
  1. Put the sugar and the beans into the Thermomix and grind for one minute on speed 4 (repeat if not fine enough for you)

    Scrape down sides and add water and cream of tartar

    Put on 100 degrees for 5 minutes at speed 2 with MC off

    Scrape down the sides with damp pastry brush to ensure no undissolved sugar

    Once again place Thermomix on 100 degrees for 5 minutes with MC off speed 2 ( repeat once more if you want a thicker paste)

    Makes approx 600ml of paste
