White Chocolate and Pistachio Biscuits (GF)

Ingredients

24 piece(s)

Biscuits

  • 120 g raw sugar
  • 120 g brown sugar
  • 120 g Butter, unsalted
  • 1 egg
  • 220 g gluten-free plain flour
  • 1 teaspoon baking powder
  • 160 g white chocolate choc-chips
  • 80 g pistachios

Recipe's preparation

  1. Weigh raw sugar into the bowl - mill for 3 sec / speed 9

    Add brown sugar and butter - cream for 20 sec / speed 5

    Add egg - mix for 5 sec / speed 5

    Add flour and baking powder 8-10 sec / speed 5

    Add choc-chips and pistachios and mix on Counter-clockwise operation 15-20 sec / speed 2

     

    Spoon mixture onto baking trays (mixture will be quite soft) and bake in oven 180 deg for 10-12 mins

Tip

The ratio's of choc-chips and pistachios can be altered i.e. 120 g of choc-chips and 120 g of pistachios.  This depends on your taste.

 

If you don't want to be GF, you can use regular plain flour!

    Sorry about that ... add the brown sugar after milling the raw sugar.  I have now changed the recipe!

    Delicious! Thanks for such a quick, successful recipe. I only had 60g of pistachios so added 20g of cranberries - a great success. These will quickly become favourites!

    Amazing gf biscuits. Biscuit recipes like these are hard to find. I cooked mine for an extra 2 minutes to make them super crunchy. Is it possible to include the brown sugar in the method? I made a complete batch of biscuits and couldn't work out why mine didn't look like yours. It was only later that I realised I hadn't added the brown sugar! A waste of time, ingredients and it meant I had to go to the shop and buy more pistachios and white choc chips. Both expensive ingredients.  tmrc_emoticons.(  With this error fixed, this recipe would have to be one of my all time favourites. Love

    These are awesome biscuits!  I love them and I don't eat just gluten free.  My husband who is gluten free was thrilled with them.  Will definitely make them again.
