White Chocolate, Raspberry and Coconut Slice

  • 150 g white chocolate, broken into pieces
  • 150 g sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 150 g Self Raising Flour
  • 80 g desiccated cococnut
  • 150 g raspberries, fresh or frozen

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Preheat oven to 180°C or 160°C fan-forced.  Line a slice tray with baking paper.

     

    2. Chop butter and white chocolate for 5 sec on speed 7.

     

    3. Melt butter and white chocolate at 50 degrees on speed 2 for 3 minutes or until melted. Scrape down the sides.

     

    4. Add sugar and vanilla and mix on speed 3 for 10 seconds.

     

    5. Add eggs one at a time through the hole in the lid while still on speed 3. Scrape down sides of bowl.

     

    6. Add flour and coconut. Mix on speed 4 for 10 seconds or until combined.

     

    7. Pour mixture into prepared tin and smooth out.  Sprinkle over raspberries and push lightly into mixture.

     

    8. Bake for 30-40 minutes or until firm.  If the slice is browning too much cover with foil for the remaining time.

Tip

If you have remaining white chocolate leftover you can either eat it tmrc_emoticons.) or chop it up and add it at step 6 with the SR flour and coconut.

    Delicious! Reduced the sugar to 130g and used frozen strawberries as I didn't have any raspberries. A winner with all who tried it.
