  • 3 ripe bananas
  • 1 tsp vanilla extract
  • 150 grams brown sugar
  • 125 grams Butter, softened
  • 2 eggs
  • 225 grams Self Raising Flour
  • 1 tsp mixed spice
  • 1/2 tsp bicarb of soda
  • 120 grams sour cream
  • 60 grams Milk

Recipe's preparation

  1. Preheat oven to moderate. Grease a loaf tin and then line with baking paper.

  2. Place bananas and vanilla extract in TMX bowl. Mix 5 secs, sp 5. Set aside - no need to clean out TMX bowl.

  3. Place butter and brown sugar in TMX bowl and mix 20 secs, sp 5.

  4. Add eggs one at a time and combine each for 3 secs, sp 5.

  5. Add banana mixture back into bowl and mix 3 secs, sp 5.

  6. Add flour, bi-carb, mixed spice, milk and sour cream and mix 15 secs, sp 4.

  7. Pour into lined loaf tin and bake for approx 50 minutes. It's done when a skewer comes out clean. Stand cake in pan for about 5 minutes before turning onto wire rack to cool further.

    Delicious warm with a cuppa!
