  • 500 g low fat milk
  • 1000 g full cream milk
  • 300 g thickened cream
  • 85 g white vinegar

Recipe's preparation

  1. 1. Add milk & cream into the mixing bowl and Heat 15 min / 80c / speed 2.
  2. 2. Add vinegar and Heat 7 min / 90c / speed 2.

    Then Rest in the mixing bowl for 5 min.

    The milk mixture will separate into curds and whey.
  3. 3. Line a simmering basket with muslin or nut milk bag and place over a large bowl

    Pour the mixture slowly into the lined basket and allow to drain for 30 min.

    Don't squise the liquid from ricotta and insure that the basket is not submerged into the liquid, if so take the basket out and place over a smaller bowl so all the whey can drain away.

    Once drained transfer the ricotta onto a serving place if using immediately otherwise place into an airtight container and store in the fridge until ready to use.

Tip

For softer ricotta reduce draining time.

For firmer ricotta increase the draining time

Homemade ricotta can be stored in the fridge in an airtight container for up to 1 week.
