Moroccan Pita Bread (Msemen)
- 1 1/2 tsp dried yeast
- 2 tsp white sugar
- 250 g water
- 375 g plain flour
- 1 tsp salt
- 1 tbsp olive oil

- 1. Add yeast, sugar and water into the mixing bowl and Heat 2 min / 40c / speed 2. Let stand for 5 minutes.
- 2. Add flour, salt & oil into the mixing bowl and Mix 6 sec / speed 6. Scrape around the mixing bowl then Knead 8 minutes.
- 3. Let the dough rest in the mixing bowl for 15 minutes, then Knead again 30 sec.
- 4. Empty the dough onto lightly floured silicone mat or benchtop. Roll the dough into a long oval shape then divide into 10 equal portions. Roll each portion into a ball, sprinkle with flour then move over onto a teatowel and cover so the dough doesn't dry out.
- 5. Work with each of the dough balls individually, flatten and roll out into a thin 20cm disc. Make sure to sprinkle a bit more flour over the dough as rolling out so they don't stick to the mat/benchtop.
- 6. Preheat a large skillet or a pan then lower the heat to medium, place one of the rolled out dought portions and cook for 4 to 5 min. Initially cook the first side for 1 min then flip over to cook the other side then continue flipping sides in this manner for the remaining 4 min until the pita bread is cooked. Meanwhile roll out another, ready to be cooked as soon as one is done. Repeat with the remaining dough portions. Keep the cooked pita breads inside a thermoserver with the lid on that will ensure they stay moist and soft.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
