Ingredients
XMAS Mix Fruit Muffins
- 280g Dried Mixed Fruit
- 20g Brandy or liquor of choice
- 150g unsalted butter, cubed
- 150g brown sugar
- 275g Self Raising Flour
- 5 eggs
- 80g Milk
- 1 tsp vanilla extract
- 1 pinch of salt
Crumble Muffin topping
- 30g soaked fruit mix
- 1 tbsp brown sugar
- 1/2 tsp mixed spice
- 1 tbsp melted butter
- 1/2 tsp lemon zest, grated
- 1/2 tsp orange zest, grated

- 1. Preheat oven at 180c fan forced.
Prepare muffin tray (I used silicone muffin tray)
In a bowl add mixed fruit and liquid of your choice, mix well, cover and set aside for 1 hour. - 2. Add unsalted butter & brown sugar into the mixing bowl and Mix 1 min/speed 4. Scrape around the mixing bowl.
- 3. Add eggs into the mixing bowl and Mix 10sec/speed 5. Scrape around the mixing bowl.
- 4. Add milk & vanilla into the mixing bowl and Mix 10 sec/speed 5.
- 5. Add self raising flour & pinch of salt and Mix 5 sec/speed 5. Scrape around the mixing bowl and repeat if needed.
- 6. Add 250g of soaked mixed fruit and Mix into the batter until combined uusing a spatula.
- 7. Pour the batter into the prepared muffin tray, set aside.
Prepared topping. In a small bowl Mix all the ingredients together. - 8. Topp the muffins every with the crumble topping.
Bake the muffins for 25 minutes.
Let cool in the tray for 5 min then transfer to a cooling rack.

Tip
This batter qty will make apx 15 to 16 small muffins baked in silicone muffin tray.
If using paper cups inserted into metal muffin tray you will end up with 12 bigger size muffins.
Store the muffins in airtight container on the bench for 3 to 4 days, or in the fridge for up to a week, or can store in the freezer in ziplock bags for up to 2 to 3 month. Defrost at room temperature and reheat in the microwave for 15 sec or can eat them cold.
These muffins can be made with and/or without liquor.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
