      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Use any basic GHEE recipe to make GHEE.

    I used this one https://cookidoo.com.au/recipes/recipe/en-AU/r132070 to make 400g GHEE from 500g unsalted butter.
  2. Let the GHEE cool to room temperature.
  3. Insert Butterfly
    Add 150g to 200g cooled GHEE, macadamia oil and COLD water.

    Add salt here if you'd like some.
  4. Whip 30 seconds, speed 4. Scrape the bowl and lid and whip again for 10 seconds.
  5. Store in the fridge.

    I store my ghee in small batches in the freezer and place them in the fridge when i'm ready to use them.

    The higher the amount of water and oil to ghee the more spreadable the ghee will be. However remember this also dilutes the flavour.

Tip

You could probably make this from bought ghee, just melt it first.

A suspect any oil would work, but be carefull about changing the flavour.
