Ingredients

Vegan Cashew Cheese (Sliceable)

  • 400 g water
  • 3 teaspoons agar agar powder
  • 120 g raw cashews, (Preferably soaked 3-6 hours and drained)
  • 40 g red capsicum, (Omit for white cheese)
  • 30 g lemon juice
  • 1 tablespoon savoury yeast flakes
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon Onion powder
  • 1/4 teaspoon Garlic powder

Recipe's preparation

    Method
  1. Place water and Agar Agar into the Closed lid"Closed lid"  (ensure agar powder is placed directly into water - not on top of blade) and cook for 5 minutes at 90ºC on Speed 3.

     

  2. After cooking, add all remaining ingredients and blend together for 1 minute on Speed 9.

     

  3. Pour immediately into a suitable container or jelly moulds using spatula to assist. If using baking tin, line with plastic wrap.  Allow to cool and then place into refrigerator.  Vegan Cashew Cheese will begin to set at room temperature. 

     

  4. Slice when firm and relish every bite! 

Tip

May be frozen - shreds best when partially frozen. 

For use on pizza or pasta dishes

 

Variation

Be creative and make your own favourite flavoured cheese by adding other herbs and spices during blending process.  Olives or finely diced vegetables could also added after blending using Reverse Counter-clockwise operation"Counter-clockwise operation" , Speed 1

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    Mixture tastes yummy! I'm sure it will be great! I added about 1 teas of turmeric and 5 leaves of my 5herb plant as I don't eat capsicuim. I also used apple cider vinegar instead of lemon - running short of those! It should be a great recipe to adapt with different flavours! Many thanks!

    Cashew CheeseCashew Cheese
    This cheese was so quick and easy to make. Plus it was delicious. Being Gluten Free, Dairy Free and allergic to coconut I've really missed having cheese. Now being able to make it myself a whole new world of favourite foods have opened up to me again. Thank you so much. Highly recommend. Easy enough for beginners.

    Great recipe, only change was I added extra nutritional yeast. My non-vegan husband loves it. That speaks volumes.
