Vegan mayo

mayonnaise egg free

  • 470 grams oil, rice bran
  • 1 garlic clove
  • 80 grams aquafaba, chickpea juice
  • 20 grams apple cider vinegar
  • 15 grams lemon juice
  • 1 level teaspoons Dijon mustard
  • 1 level tablespoons Salted Capers
  • 1 level teaspoons paprika, red
  • to taste salt
  • to taste sugar raw

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Weigh oil in seperate jug and set aside
  2. Place garlic into mixing bowl and chop 3 sec speed 7,scrape and repeat if necessary
  3. Add all remaining ingredients other than oil
  4. With MC on, mix 2 min speed 4, gradually pour oil onto lid so it seeps into the bowl.
  5. Scrape into jar and refridgerate
