Zucchini fritters

Zucchini fritters

  • 1 --- zucchini, Large
  • 1/4 --- onion, Large
  • 200 grams Cheddar Cheese Cubed
  • 1/2 bread crumbs, 1/2 cup
  • 1 egg, Large
  • 1/4 teaspoon salt

Recipe's preparation

  1. Preheat oven to 190degrees fan forced oven and line baking tray with baking paper

    1.) rough chop zucchini. Put in TM bowl and chop 5 seconds speed 6. squeeze as much moisture out and set aside.

    2.) without washing the bowl add cheese and onion and chop 5 seconds speed 6

    3.) add remaining ingredients including the drained zucchini and mix for 10 seconds reverseCounter-clockwise operationspeed 4 until all combined

    4.) scoop 1 tablespoon amounts into your hand to make patties place on tray.

    5.) bake for 20 minutes turning half way through until golden

Tip

I used a chux cloth to squeeze moisture out of the zucchini

    Delicious recipe. I did halve the cheese, added some herbs and cooked for 10 minuets longer. Will definitely make again.

    My super fussy toddler loved these! I dropped the onion & substituted with a carrot, and a tiny bit of coriander (could probably add more nxt time). And added a couple rashes of short cut bacon - didn’t add salt. Also added only 170g cheese as I saw everyone’s comments, and baked for longer. Yum! And now I can freeze & store for a busy evening/lunch, and know she’s getting veggies! Thanks for sharing!

    I followed recipe, but added carrot, parsley, mushrooms & kale. Then just before mixing I added some crushed Garlic too. Took longer to cook as i didnt drain, but tasted amazing! Thanks tmrc_emoticons.)

    These fritters are delicious.  I actually halved the cheese and cooked for an additional 10 mins.  the recipe fed three of us for lunch with a cob of corn, tomatoes, baby spinach and yoghurt.  Would also be great as starters or a tapas.  Thanks for sharing.
