- 360 g warm water
- 5 g Yeast, dry
- 400 g bakers flour
- 100 g wholemeal flour
- 50 g LSA mixture (linseeds, sunflower seeds, almonds)
- 60 g Oats,rolled
- 40 g pepitas (pumpkin seeds)
- 40 g sunflower seeds
- 5 g Wallabies bread improver (or other brand)
- 30 g Olive oil or Rice Bran oil
- Poppy seeds to sprinkle on top

Recipe's preparation
1. Place water and yeast in TM bowl & cook 1min 30sec/37*/speed 2.
2. Place both flours, LSA, oats, pepitas, sunflower seeds, bread improver & oil in TM bowl and mix 20sec/speed 6.
3. Knead 2min/"Closed lid" /"Dough mode"
4. Place in pre warmed, lightly oiled Thermo Server or lightly oiled bowl and cover with cling wrap. Allow to rest in warm place until double in size (at least an hour and a half)
5. Knock down in bowl, place in non stick loaf tin, forming into shape at the same time. Brush lightly with a little water and sprinkle poppy seeds over. Place in warm place to rise again (probably another half hour).
6. Place bread in cold oven, turn to 180*C and bake for 35min or until brown and sounds hollow when you tap the bottom.
7. Allow to cool on wire rack.

Tip
To help the bread rise in colder months, warm up a heat bag and sit the bowl on it (not too hot though) on a shelf in pantry.

Hunters Wholemeal Country Grain Bread...
I have been cooking the five seed bread on the Cookidoo site for a while. This recipe is an improvement on that one. The bread is less dense and nicer than the five seed bread. You do need to add at least 1 teaspoon of salt to the recipe. Salt helps the gluten in the bread. This will be my "go to" recipe for seeded bread now. Thank you

Hi janeymac, glad you loved the bread, kids too! I think improver just makes it last longer, but sometimes it's eaten well before it would go off. Lol.

easy to make and yum. I left
easy to make and yum. I left the improver out, but it was still nice. even the kids ate it as the seeds are soft. did need more salt though but still great. will make again and again.

Sorry to hear it wasn't quite fab for you. I do know all ovens vary so an extra 5-10 min isn't all that drastic.
This loaf doesn't end up massively high due to the oats, seeds and wholemeal flour, but I've not made it with spelt flour, so maybe use wheat wholemeal next time, that might make the difference.
I leave it to rise in the Pantry too as it's a more even temperature, easier to keep warm. Perhaps try the slightly warmed heat bag under the bowl? I know at this time of the year our airconditioning will mess around with the rising.
Another thought is the yeast, mine wasn't even quite near the use by date but I think it was getting a little old and my last lot of pizza dough was a little dodgy, this may also be a factor with bread.

Oh, PS... Sorry about low salt, I'm not a big fan of salt as I've been brought up on very little so I hardly cook with it.

My bread needed 45 min, didnt really rise all that well and it tastes as if it needs salt.. I will try it again. My wholemeal flour was spelt flour.. Will use wholemeal wheat next time.. Will give you feedback. Im keen for it to work.
