Ingredients

Hunters Thick Lemon Curd (Cake filling)

  • 200 grams caster sugar
  • 3 Medium lemons, zest (grated) and juice
  • 5 egg yolks, medium size
  • 120 grams freshly squeezed lemon juice
  • 100 grams Butter, cubed, cold

Recipe's preparation

    Hunters Thick Lemon Curd
  1. 1. Place sugar and grated lemon zest in Closed lid"Closed lid" . Grind for 5sec/sp 9. Scrape side down.


    2. Add egg yolks and whisk 6 sec/sp 6. Scrape down sides and whisk again 4 sec/sp 5. Scrape down sides.


    3. Add lemon juice, whisk 5 sec/sp 5, scrape down sides.


    4. Select Thickening"Thickening" thickening mode/80*


    5. Add butter cubes one at a time, mixing on sp2, then increasing to sp4 for up to 2 minutes until all the butter is incorporated and smooth.


    6. Select Thickening"Thickening" thickening mode/80* . Check to see if it is very thick in the back of a spoon.


    7. Cook a further 8-10 min/ 90*/sp 2, until thick and slightly ploppy. Curd will thicken as it cools.


    8. Pour into a bowl if using for filling a layered cake and lay cling wrap on top to avoid getting a skin on top let cool a little then place in the fridge to cool completely before using for cake filling.

    OR pour into 2 clean sterile jars, let them cool a little then seal with the lids and refridgerate.

Tip

Cooking time may vary due to factors such as the temperature of the eggs, butter and the room.

So the last step of cooking (step 7) may be shorter or longer, and will have to be checked a couple of times during the stated cooking time. Scrape sides down while you do the check, it also helps to cook it evenly.
