Keto Bread Rolls

  • 150 g Almond Flour
  • 40 g Ground Psyllium husk powder
  • 10 g baking powder
  • 1 tsp sea salt
  • 2 tsp Cider Vinegar
  • 225 mls Boiling Water
  • 3 egg whites
  • 2 tbsp sesame seeds (optional)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Instructions
  1. Preheat oven to 175 degrees celcius.
    Place all dry ingredients into TM bowl.
    Bring the water to a boil and add it, the cider vinegar and the egg whites to the TM bowl.
    Mix Gentle stir setting for 30 seconds. Do not over mix the dough. The consistency should resemble play-doh.
    Moisten hands and roll into 6 pieces. Place on greased tray.
    Bake on lower rack in the oven for 50 minutes depending on the size of your bread.
    Your rolls are ready when you hear a hollow sound when tapping on the bottom of the bread.
    Serve with butter and toppings of your choice.
    Delicious straight out of the oven.

Tip

In all baking, especially low carb baking, the ingredients and amounts used are important. The eggs and ground psyllium husk are hard to replace in this recipe.

    Thank you for sharing this recipe. By far the closest recipe to bread I have tried. No eggy taste and delicious. Had a little trouble incorporating the ingredients and needed to mix it longer.

    Hi. I'm sorry I must have been doing something wrong. Stirring for only 30 secs in thermo (I have TM6) didn't incorporate all ingredients together, especially the egg white. So I kept going at short intervals but keeping in mind 'dont over stir' I was still left with clumps of mixture not fully mixed. Anyway I baked and they rose beautifully, looked delicious but unfortunately hollow inside. Any suggestions?

    Thanks, my rolls turned out great! i have used a similar recipe before (couldn't find it so that's how i found yours!) but these quantities and steps worked better. Texture was nice and airy, like 'real' bread! Will try again with a loaf next and bake longer.

    I made these, and have tried many bread recipes. Without a doubt, these were really quick and easy to make. They worked out prefectly. I even froze them and defrosted naturally and they were just as good. They are divine toasted too. This recipe is highly recommended!Smile
