Awwama (Lebanese sweet dumplings)

  • 125 grams oat flour
  • 125 grams plain flour
  • 60 grams cornflour (starch)
  • 2 level tbsp sugar
  • 1 level tbsp dried instant yeast
  • 1 Milk, Half cup
  • water
  • 1 level tbsp vanilla extract

Sugar syrup

  • 300 grams sugar
  • 100 grams water
  • 1 level tsp lemon juice, (Fresh)
  • 2 level tsp Orange Blossom Water

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Awwamma
  1. Ad all the dry ingredients in the mixing bowl
  2. Ad milk and vanilla extract
  3. Mix on 5.5 ad water through the lid until slight runny consistency about 10 seconds (water should be around half a cup)
  4. Transfer to a bowl and let rise till double in size.
  5. Clean and dry mixing bowl
  6. Add water, sugar and lemon in mixing bow 10min/90 degrees/speed2
    add orange blossom water in the last 2 minutes of cookings.

    Allow to cool to room temperature before using.
  7. Heat oil , once oil is hot scoop in small balls of the dough into the oil, do not over Crowed.

    Take out once golden and place in sugar syrup.

    once soaked in syrup transfer to serving plate.

Tip

You can make oat flour by milling oats speed 9 for 10 seconds.
You can take out the awwamat once cooked before golden and before serving re-fry them again to golden colour to get extra crunchy.
