Caramelised Apple Cake

Caramel Syrup

  • 40 g softened butter
  • 1 tbsp water
  • 100 g brown sugar

Cake

  • 2 large apples, peeled, cored, thinly sliced
  • 200 g softened butter
  • 85 g Milk
  • 3 eggs
  • 1 tsp Vanilla Bean Paste
  • 75 g brown sugar
  • 75 g caster sugar
  • 250 g Self Raising Flour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Directions
  1. Preheat oven to 170C.

     

  2. Line a 22cm springform tin, ensuring the base and sides are covered so the syrup cannot drip out. 

     

  3. Add all caramel syrup ingredients to mixing bowl. Cook 3 minutes/100C/speed 2.

     

  4. Pour syrup into prepared tin. Arrange thinly sliced apples over syrup.

     

  5. Add all cake ingredients to mixing bowl. Mix 20 seconds/speed 4. Scrape down sides. Mix 10 seconds/speed 4.

     

  6. Spread cake batter over sliced apples.

     

  7. Bake one hour or until golden brown and firm to touch. Leave sitting in tin for 5-10 minutes before turning onto serving dish.

     

  8. Serve warm as a dessert, or cooled as a cake.

    I used the springform tin with double paper and there was no leakage.
    I had one apple leftover and I chopped it and added it to the batter.

    So delicious and looks gorgeous on the plate! I doubled the baking paper and cooked in a springform tin for an hour at 150 fan. A little of the sauce did leak, so next time I’ll use a tray on the bottom oven rack. Makes a huge dessert so great to feed a crowd. Thanks for sharing!LoveLove

    I put half the apple in the bottom and half through the middle, next time will put it all on the bottom (the caramalised apple was fantastic!).
    I cooked at 150 deg for 40 mins in my fan forced oven.

    Huge thumbs up from the whole family! My only variation was I added an additional layer of apple slices through the middle of the cake as I had cut too many for the top. I used a springform pan and doubled the paper to avoid any leakage. Delicious, my new go-to apple cake, thanks!

    Delicious! I used an ordinary cake tin, didn't cut the paper but did as slyemm did. In case of overflow I had a cookie sheet underneath. A little syrup did overflow. As my fan forced oven is faster than any others I have used I had it on 150, and it only took 40 min. Absolutely yum! Second night had it for dessert with custard.

    Oh!! Thank you for the feedback! I need to word it a little bit more clearly I think! I don't cut the paper to fit in the tin... I sort of cut a huge piece then push it all in so it's like a big catching sack! But if in doubt, use a normal cake tin. I don't know how well it comes out from a normal tin though? I have always used the springform tin.

    This cake is delicious however I would recommend NOT using a springform tin as a friend called me and said she nearly burnt her house down as the caramel seeped through the baking paper and on to base of her oven causing smoke to billow throughout the house and I advised her to use a normal cake tin or even a ceramic pie dish.
