Cashew Cream Pie with Poached Quince

Ingredients

Base

  • 140 g mixed raw nuts, (eg: brazil, cashew, almond, macadamia)
  • 75 g coconut flakes
  • 12 dried, pitted dates
  • 1 tablespoon coconut oil
  • 1 pinch sea salt flakes

Filling

  • 170 g raw cashews, (soaked in water for 1 hour)
  • 200 g coconut cream
  • 1 tsp Vanilla Bean Paste
  • 60 g Pure Maple Syrup
  • 1 tablespoon coconut oil
  • 1 pinch sea salt flakes

Quince Topping

  • 2 quinces
  • 4 tsp Butter, (or non-dairy alternative)
  • 4 tbsp Pure Maple Syrup
  • 100 g water

Recipe's preparation

    Quince Topping
  1. Preheat fan-forced oven to 160 degrees celcius.  Lightly grease an oven-proof dish.  

  2. Cut quinces in half and scoop out seeds with a spoon.  Place in dish skin-side down.  Place 1 tsp of butter in each 'hollow', along with 1 tbsp of maple syrup in each.  Pour water in dish and cover with lid or aluminium foil.  Bake in oven for 3 hours, basting with juices each hour.

  3. Carefully remove fruit from dish and scoop soft flesh from skins, placing into a separate bowl.  Also keep remaining juices, adding to the bowl.  Reserve for serving.

  4. Base
  5. Add all indredients into TM bowl and process for 30 secs / speed 9

  6. Press evenly into a loose-bottomed tart/flan tin using your spatula

  7. Filling
  8. Drain water from cashews and add to TM bowl with remaining ingredients.  Blend for 1 min / speed 9

  9. Pour into tin over base and place tin carefully into freezer to set for 1.5-2 hours.  

  10. When ready to serve, remove from freezer and allow to sit at room temperature for 10 mins.  Carefully remove from tin, cut into 8 portions and serve with quince mixture heaped on top!

Tip

You can easily make this a vegan, non-dairy dish by substituting the butter in the quince topping for a non-dairy alternative such as coconut oil.

 

This is best served slightly thawed.

 

Needs to be stored in the freezer until ready to serve.
