Cherry Ripe Filling

  • 25 g dried goji berries
  • 110 g roasted cherries, (see tips)
  • 60 g Desiccated Coconut
  • 20 g coconut oil

Chocolate

  • 100 g cocoa butter
  • 50 g Coconut Syrup
  • 30 g cacao powder

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cherry Ripe Filling
  1. 1. Place Goji berries into Thermomix bowl and mill for 4 seconds / speed 8

    2. Add roasted cherries and chop for 15 - 20 seconds / speed 4

    3. Add desiccated coconut and coconut oil and mix for 20 seconds / speed 5

    4. Press into silicone moulds or silcone ice trays and refrigerate for 1 hour until set

  2. Chocolate and Assembly
  3. 1. Chop cacao butter into chunks and place in Thermomix bowl. Mill for 10 - 20 seconds / speed 8

    2. Cook for 8 minutes / 37C / speed 2. Scrape down sides towards end of cooking time to ensure all is melted

    3. Add coconut syrup, cacao powder and salt and cook for another 7 minutes / 37C / speed 2

    4. Mix for 10 seconds / speed 5 to ensure coconut syrup is evenly distributed

    5. Once set, remove cherry ripe filling from trays and dip into warm chocolate with a fork, allowing to drain slightly before placing a tray lined with baking paper

    6. Coat all cherry ripe pieces into Chocolate and then place in fridge to set for another 5 minutes

    7. For extra decoration, place a small amount of the remaining melted chocolate into a piping bag and drizzle on lines

    8. Store in the fridge for a week or so (if they last that long)

Tip

To Roast Cherries - half approx. 250g cherries and remove the pit. Place cut side up on a tray lined with baking paper. Place in a 160C oven for 20 minutes. This should give you about 110g roasted cherries

If any chocolate remains, this can be poured into a tray lined with baking paper and used for later cooking or eaten plain or used to make bark

    I couldn't get the chocolate mix to work so I melted dark chocolate

    and dipped the cherry ripe filling in that.... Was very yummy tmrc_emoticons.;-)

  • How on earth did i miss this

    How on earth did i miss this ! especially since it has just been christmas. i am making these today , however since i have a dehydrator i will get my cherries and dehydrate them instead of roasting them. Thankyou Amanda

    This recipe seems to be fine for my TM31. However, I added a dash of vanilla extract, as the ingredient list didn't specify the vanilla seeds...

    Also, I probably ought to have ground the rock sea salt before adding it: a couple of chunks did not dissovle.

    However, my kids and I agree: it was easy to make, and delicious to eat!
