Cherry Ripe Soft Serve Ice Cream

  • 100 grams Dark Choc Bits
  • 500 grams Frozen Cherry Pitted, (I use woolworths frozen)
  • 150 grams Fresh Coconut Cream, (I use Alpine Fresh)
  • 40 grams Desiccated Coconut

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Put Dark Choc bits into bowl. 

    Combine 4 seconds, speed 8

  2. Add Cherries to dark choc in bowl.

    Combine 15 seconds, speed 8, remove lid and scrape down sides.

  3. Add fresh coconut cream and desiccated coconut to mixture in bowl.

    Combine 40 seconds, speed 5.

  4. Scrape out into a container and chill in freezer for at least 30 minutes before serving.

Tip

Dip ice cream scoop into slightly hot water to help get the perfect scoop.

You can use fresh thickend cream instead of coconut cream.
