Choc Almond Coconut Truffles

Ingredients

36 piece(s)

  • 210 g almonds
  • 50 g Coconut, desiccated
  • 50 g Coconut, shredded
  • 15 g cocoa
  • 0.27 litre coconut cream
  • Coconut, shredded, extra for coating
  • 30 g Natvia or sweetener of choice

Recipe's preparation

  1. Pulse almonds 5 or 6 times until coarse meal.
  2. Add coconut, cocoa and sweetener. Pulse twice to mix.
  3. Add coconut cream. Mix speed 4-6 until even wetness.
  4. Roll into walnut sized balls. Coat in shredded coconut.
  5. Set in fridge, serve chilled.

All dessicated or all shredded coconut can be used.

    the 100g goes into the mix and you will need extra to coat the balls.

    Can you please clarify - does 50g of desiccated coconut go into the mix and 50g of shredded coconut used for coating, or does all 100 g of coconut go into mix with extra shredded for rolling?  Thanks.
